In the mood for cupcakes

I admit it the girls and I DVR cupcake wars every week, along with all the cooking shows. (I think my waistline does not appreciate the food shows though, I mean really have you ever watched an entire cooking show without getting a snack, curses!) And I have found even a plain jane taste-bud girl like me can enjoy a taste of things I would normally never buy..(hopefully my neighbors like the things I bake because they get them all the time). So I think my new favorite is a lemon cupcake with fresh raspberry butter cream frosting, recipe from here: http://www.mybakingaddiction.com/raspberry-lemon-cupcakes/
I did adapt it a little. In the frosting I did NOT use extract or puree and instead used some homemade raspberry freezer jam, about 2 tablespoons and a small container of fresh raspberries. I would also recommend refrigerating the icing a bit to firm it up ( I like to do that with all my frostings).

I just made last Friday a Banana cupcake with peanut butter frosting, I don't like peanut butter but this frosting reminded me of a reeses peanut butter cup. the cupcake is from here: http://www.vintagevictuals.com/2009/03/banana-cupcakes-with-classic-cream.html

 Then I  made a Lime  Coconut cupcake, for The Man because it is was our 14th  anniversary wow. Any way he made  a mushroom spinach lasagna for dinner, I did desert.

3cups cake flour sifted
1 Tbsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
sift together set
mix together
1 cp butter softened
2 cp sugar
4 eggs room temp
1 tsp vanilla
 1 1/2 cp whole milk
1/4 cp apple sauce
I baked at @350 for 18 min for reg size 12 min for mini
