Peach Rapsberry oatmeal crumb cake

My mom brought me down a box of delicious peaches and nectarines this weekend and so saturday morning we made this for breakfast

The recipe is adapted from the book Beyond Oatmeal by Carlene Duda
from her apple oatmeal crumb cake


1 cup flour
1/3 cup rolled oats
1/3 cup sugar
1/3 cup brown sugar packed
1/8 tsp salt
1/8 tsp ground nutmeg
1/4-1/2 tsp cinnamon (i like cinnamon so I did 1/2)
1/4 cup butter cut into small pieces
1/4 tsp baking soda
1/2 tsp baking powder
1/3 cup apple juice (i used apple raspberry)
1 tsp vanilla
1 large egg
3 peaches cut up in to small pieces (or nectarine...i used both)
1/2 cup raspberries (i used frozen)
  Preheat oven to 350*

combine flour, oats sugars, salt, nutmeg & cinnamon in to bowl then add butter and cut in
using a pastry cutter
reserve 1/3 cup of this mixture and add 1/3 cup oatmeal

add baking powder and baking soda  and mix in. Then add in egg, vanilla & juice and mix on medium speed with a mixer.
Fold in peaches and raspberry
sprinkle 1/3 cup reserve & oats on top
put in greased pie plate and bake for 30 min

I topped ours with homemade whip cream
with a 1/2 tsp almond extract mixed in. YUM!


This morning I doubled the recipe and put it in a 9x13 pyrex pan and baked it for 45 min @ 375*

Do you have a missionary

In case you have a missionary too, my nephew is in St. Louis and I try to send him a small package every 3 months-but what does a missionary need or what? And I like to do themes so I found some fall bags of M&M's and made this card to go with it....I left a spot blank so you can write a little note of your own.
Well I hope someone out there can use it.

Hotel for Bees

 I am so glad Bug got into trouble for chasing the Little Dude around the house and him getting a big old bruise from crashing into the wall(just wait for it....) because I sent her downstairs to cool down and she came right back up and said "mom there is a bee flying around the light fixture" so I being the brave but allergic gal that I am went down stair armed with a dollar store fly swatter-poised to take out that pesky invader only to find I was out numbered. That's right there were 4-5 bees flying around and in that instant I knew I needed to call for back up "MARK- come here right now" I shouted.
So being the dear husband that he is, he rushed down (after putting away the cell phone and computer for work purposes only) only to discover at least 30 on the window and the faint buzz of a few more coming from the fireplace. Off to the neighbors I dashed to retrieve what I knew I should have purchased a few days ago at the store Bee spray, and back I ran.
I grab the kids like the house is on fire and then Bug mentions oh yeah I think I saw some bees outside on the chimney when I was jumping on the tramp. Ok so we run out to investigate and low and behold I find this (insert a small gasp of panic at this moment)
Goose then mentions "oh yeah I saw the bee flying around downstairs and I was going to tell you but then I forgot" WHAT how do forget about a bee in the house thinks the mother who has been stung as a child and then her face blew up like a balloon.
So I sprint up the stairs and make a "BEE-line" (pun totally intended) for the computer to look up the number for the bee keepers association (yes watching the news pays off since a few weeks ago I saw a guys car get swarmed in minutes by bees) and luckily I called the right gal who sent over a bee keeper to retrieve them for FREE! 
It may not look like much but he said there was easily over 25,000 bees, yes I almost fainted when I heard that. He could not fit them all in his box (which only holds 15,000-20,000) because it was overflowing so he will be back tomorrow to collect the rest. He said they had only been there a few minutes and it was just a resting place so we hope they don't leave the box tomorrow before he comes back.
